I love a good salad. We’re planting lettuce this week and I am pretty giddy at the thought of those fresh summer salads (especially considering the local market is charging $3.58 for a head of red leaf!)! This is my favorite dressing to drizzle over my greens-hands down. My Aunt created this and used to make it for special occasions; it was always a huge hit at every family gathering, and anyone who tried it–asked for the recipe. Yep, it is that good.
Gather together your ingredients and let’s make up a batch!
- quart canning jar with lid/ring
- 1/8th cup white vinegar
- 1 cup mayonaise
- 1 teaspoon sugar
- 1 teaspoon finely diced onion (red or white)
- 1 teaspoon mustard
- 1/2 cup honey
- 1/2 cup olive oil
- 1/2 teaspoon black pepper
- sea salt to taste
Combine everything in a canning jar, get your lid/ring on tight and shake until well mixed. Refrigerate, up to 2 weeks…if it lasts that long. Happy summer salad season!
